Not a very interesting title, but it accurately sums up this post. So lets get right to it!
Has anyone else been stocking up on blueberries lately? I have! And it was a pint-sized container of blueberries staring at me from the fridge shelf that inspired me to make them into some muffins. But if I’m making it from scratch, why not try to healthify it a little, ya know?
And then these babies were born!
Sorry, I didn’t take any pictured during the mixing process, but you can imagine for yourself, kay? Here’s the recipe.
Healthier Blueberry Muffins (makes 12)
1 cup all purpose flour
1 cup whole wheat flour
3 Tbs sugar
¾ tsp Truvia
1 scoop whey protein powder (vanilla praline)
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
2 Tbs. butter, melted
¼ cup applesauce
¼ cup almond milk
2 eggs
¼ cup greek yogurt (honey flavored)
1 tsp vanilla extract
1 ½ 2cup blueberries
1 tsp lemon juice
Bake at 400
Mix together all dry ingredients in a small bowl
Mix together wet ingredients in a larger bowl.
Add wet ingredients to dry ingredients and stir until flour just moistened (it will still be lumpy). Fold in blueberries. Divide batter and bake 18 – 20 minutes, or until golden brown. Let cool 10 minutes before serving (or storing)

I loved it – thought it was perfect! It could stand to use just a touch more truvia (it wasn’t very sweet), but I like them not overly sweet so I thought it was great!
And now the shadow box…
I bought a shadowbox shortly after my half-marathon, determined to put it together so I can always remember my first half! I was duped into buying an official race photo of me crossing the finish line (it was so packed my family couldn’t get a shot of me crossing the finish) and today I FINALLY got around to going to Kinkos to Make a color copy of my race number, but shrunk down in size so it would fit. Then, I used velcro to secure everything in place inside the box. It was super easy and took about 5 minutes tops!
Finished product:
I was pretty stoked with how it came out……although now that I’m looking at it I feel like I should swap the sides for the picture & race number to make it more symmetrical.
Hmmmm…..
Anyways, I might much on another one of those muffins before jumping in the shower. It’s been a long & crazy busy (but very productive) day! It feels good, though! I got a TON of BIG stuff knocked off my To-Do List today!
I love blueberry muffins! It’s been way too long since I’ve made some. That needs to change 🙂

I ❤ muffins- to me they are just the perfect snack. Especially if you can make them healthy! Great idea with the shadow box! I ran my first half in May and haven't gotten around to anything like that- one of these days 🙂

Um, yeah, I cant make those muffins b/c they would be gone within a day. But then again, I could make them on a work night and then bring some to coworkers for popularity reasons. Plus I have blueberry protein powder so I wonder how that would be in them??
